RP's Apricot Vanilla energy bars Special equipment: Food Processor 1 cup dried apricots 1 cup medjool dates (pitted, not soaked) 1 cup almonds (soaked, then dehydrated to crisp) 1 cup cashews (soaked, then dehydrated to crisp) 1/2 tsp vanilla extract coconut oil for baking dish 1. Place all ingredients into food processor 2. Pulse chop until mixture holds together 3. Press into greesed glass baking pan 6 X 10 4. Pop into freezer for 30 minutes to set 5. Remove from freezer 6. Cut into 8 bars Keep in refridgerator or freezer until ready to eat. Raw Mexican veggie soup Special equipment: High Speed blender
2 cups water 2 large tomatoes 2 cups corn 2 stalks celery 2 carrots 1 slice white onion 1 slice red pepper 1/4 cup fresh cilantro 1/2 tsp cummin 1 T Mexican seasoning 1/2 tsp celtic sea salt 1 cup cabbage 1 clove garlic
1. Set aside 1 tomato and the corn 2. Place all remaining ingredients into a Vita Mix, and blend for 1 minute 3. Turn blender to the lowest setting, and then add tomato and corn and blend for 30 seconds 4. Heat to finger warm on the stove
Almond JOY nut milk shake
Special equipment: High speed blender
1/2 cup almond milk 1 T cacao powder or nibs 1 T coconut oil 4 medjool dates 1/2 tsp almond extract 1/8 tsp cinnamon dash nutmgeg dash cardamon 1.5 cups ice
1. Set ice aside 2. Place all other ingredients into blender, blend on high for 45 seconds 3. Continue to blend and add ice, blend for 30 seconds Enjoy! |
